Beef Curry with Rice
6 Medium Potatoes
4 Carrots peeled and cut and diced
1 Cup green beans
3 sticks of celery finely chopped
1 Tbls tomato paste
1L Vegetable Stock
2 Tbls Cipole Fantasmi Onions
2/3 Cloves of 'Aglio Sott'olio garlic chopped
1/2 teaspoon Chilli Bomb Rosso UNO
1tsp Mild Curry Powder
1 Tin of sliced peaches (400g tin)
Salt and Pepper to taste
2 cups of rice
Add the Chilli Bomb Rosso Uno, turmeric, curry powder and salt fry for 1-2 minutes.
Add in the Ragu Base and tomato paste.
Add in the stock and then add in the beans, carrots and potatoes.
Leave to simmer for 30-40 minutes until potatoes are cooked but firm.
Chop up the peaches and add them in. Continue simmering for approximately 20 minutes.
Turn off, put the lid on top and leave to rest.
Boil the rice and serve.
Optional serving suggestion: Substitute rice with Bulgar wheat, Quinoa or Cous Cous
