Beef Curry with Rice
2 Carrots peeled and grated
1 tin red kidney beans
1 stick of celery finely chopped
1 Tbls tomato paste
250ml Vegetable Stock
2 Tbls Cipole Fantasmi Onions
2 Cloves of 'Aglio Sott'olio garlic chopped
1/2 teaspoon Chilli Bomb Rosso UNO
1tsp Mild Curry Powder
Salt and Pepper to taste
2 cups of rice
Add in the minced meat (Vegetarian mince optional)
Add the Chilli Bomb Rosso Uno, curry powder and salt fry for 1-2 minutes.
Add in the Ragu Base and tomato paste.
Add in the stock and then add in the beans and carrots.
Leave to simmer for 20-25 minutes.
Turn off, put the lid on top and leave to rest.
Boil the rice and serve.
Optional serving suggestion: Substitute rice with Bulgar wheat, Quinoa or Cous Cous
