This recipe is comfort food at it's best...
1 Leg of Lamb (or any meat of choice)
1 Tbls Stir Crazy Plum Chilli or Damson Sweet Chilli
Salt to taste
Aglio sott'olio cloves - garlic for inserting into the meat
Take a sharp knife and make strategic incisions where the garlic and rosemary are to be added
Preheat oven to 200deg Celcius (180deg fan)
Select a dish big enough for the meat allowing room for accessing the juices for basting during the cooking process.
Preparing the basting:
Take 1-2 Tbls of Stir Crazy Plum Chilli or Damson Sweet Chilli
Add 1 Tbls oil
Mix together well and baste.
